It’s the time of year where I crave hearty casseroles that warm me up and fill me up. Unfortunately as much as I love these casseroles usually they are not exactly light and have me cringing because I know they aren’t exactly “light”. Usually this doesn’t stop me from consuming them during the winter because I’m all about the comfort meals you should all know that by now!

Today I have a hearty casserole that isn’t going to damage your waistline. I know that will have you smiling from ear to ear because as much as it looks like the dead of winter outside swimsuit season will be here before we know it. As much as I love summer it’s not always so fun to put the swimsuit on after the hearty winter food!

Light Cashew Chicken Quinoa Bake ~ Comforting Casserole Stuffed with Broccoli, Chicken, Quinoa, Water Chestnuts, Cashews in a Light Cream Sauce and Topped with Cheese!

This casseroles is packed with filling quinoa, broccoli, water chestnuts, broccoli and of course topped with cheese! The sauce is made with NEW Silk Cashewmilk. Light Cashew Chicken Quinoa Bake

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

Yield: 4 servings

Light Cashew Chicken Quinoa Bake

Ingredients

  • 1 c. chicken broth
  • 1/2 c. all-purpose flour
  • 2 c. Cashewmilk
  • 1/4 c. soy sauce
  • 2 cloves garlic, minced
  • 3/4 c. uncooked quinoa
  • 1/2 lb boneless skinless chicken breasts, cubed
  • 1/2 c. water chestnuts
  • 1/2 c. broccoli
  • 8 oz cashews
  • 2/3 c. white cheddar cheese, shredded

Instructions

  1. Preheat your oven to 375°.
  2. In a medium saucepan over high heat, whisk together the chicken broth and flour until smooth and cook for a minute. Add the cashew milk, soy sauce and garlic and cook for an additional 3-5 minutes until thickened.
  3. In a large bowl, fold together the sauce with the quinoa, chicken, water chestnuts, broccoli, and cashews. Pour into a 2 quart sprayed baking dish. Top with the shredded cheese and bake for 40-50 minutes covered until the quinoa is sprouted and the chicken is no longer pink. Serve immediately.
