Granola Rice Krispie Treats are everything you love in a granola bar and everything you crave in rice krispie treats!
My kidsâ last week of summer break was spent about 5 hours away with their grandma and grandpa. Â When this trip was in the planning stages, I have to admit, I was excited by the thought of having the whole house to myself. Â No tv, no music, no doorbell, no fighting, no kids running in and out. Â Just me, my husband, my dog and peace.
But when the time came for me to pack them up to leave, I was not excited at all! Â In fact, I didnât want them to leave. Â I knew they were going to have a blast, but I was going to miss them. Â I donât want a completely quiet house, I like the noise, the chaos, the activity and the liveliness. Â I like it because it means family.
A few hours after I dropped them off, I occupied myself in the kitchen.  The kitchen is one place I always feel good.  I decided Iâd surprise the kids with a little treat for their return.  Knowing school was right around the corner, I made them a pan of these granola rice krispie treats.  The perfect afternoon snack!  Well, they would be perfect if they made it that longâ¦Iâll get to that in a minute.
You may not know this but August is National Olive Oil Month!  In honor of this occasion, Iâve taken the Pompeian Pledge to swap out butter for Olive Oil in some of my recipes.  Guess, what?  These Granola Rice Krispie treats are one of those recipes!  Why swap olive oil for butter?  Olive Oil contains less saturated fat than butter and no cholesterol.  The nutty flavor in olive oil was absolutely perfect for these treats!  It lent these bars an earthy undertone that you find in your favorite granola bar without taking away any of the sweetness in the rice krispie treats!  I used maple flavored granola, but your favorite flavor would do fine!
So, as I was saying, these rice krispie treats did not last long. Â I did make them for the kids but I pretty much ate them myself. Â Turns out I eat when I miss my kids! Â Well, better make another batch ASAP!
