I have been focusing on redefining my eating to include less processed foods and still keep all the flavors I love. This is a challenge at lunch time for me and for my kids. It is so easy to go to a restaurant and grab something or plop a pre-packaged lunch meal for the girls into their boxes. There is no telling what is really in that food though. So, I plan and make lunches for the entire week for me and my children on Sunday. It is fun to be able to get back in the kitchen and not be afraid of food and know that I am giving my kids and myself a healthy dose of love every day for the week no matter how busy we are. After all, we are a cooking family. It doesn't mean that has to stop because I want to be healthy. It just means adapting those flavors and skills into something more. Challenge accepted!

With this one recipe I have four lunches that I will look forward to and feel good about all week.
