this easy to make miso instant noodle bowl has all the convenience of packaged instant noodles, only with fresh ingredients and a lot more flavor

when I’m not paying attention, my husband eats like a kid

ice cream, gummy bears, frozen burritos, and the worst …

instant cup of noodles

I hate to think how many he’s eaten for lunch over the years

I get that they are convenient, and when you have customers calling and stopping in non-stop ALL DAY LONG, fast is key, but really the ingredient list is frightening.

so, I tried to recreate his favorite noodle bowl, that could be ready fast and completely portable

in a glass jar add your flavorings – I chose miso, soy sauce , and Thai chili sauce

then add your noodles, I used  nona lim fresh rice noodles, if you are using another style of noodle such as ramen – you will need to pre-cook them

add a protein, I chose sliced chicken breast, and then add the veggies such as carrots, mushrooms, edamme, and bok choy – really anything goes

seal up your jar, and refrigerate until ready to use

when it’s time to eat, boil water, fill your jar leaving a small space at the top, cover, and allow the noodles to sit 2 – 3 minutes

a little bit of prep, and a few minutes to boil water and lunch is good to go.

Ingredients

  • 1 Tbsp miso paste
  • 1 Tbsp soy sauce
  • 1/2 - 1 tsp thai chili sauce
  • 1 cup of rice noodles (more if you are using a larger jar)
  • 1/2 of a cooked chicken breast, sliced
  • 1 carrot, sliced
  • handful of sliced mushrooms
  • handful of edamame
  • baby bok choy

Instructions

  • place ingredients in the order listed into a glass jar
  • cover and refrigerate until ready to use
  • boil water, and pour into jar - leaving room at the top
  • cover jar, and allow to heat for 2 - 3 minutes
  • stir, and enjoy
