Did you know that September is National Chicken Month? In years past that might mean only one thing, a dedication to delicious meals enjoyed with chicken. However, the resurgence of chicken ownership in the past couple of years might have you thinking about hens, maybe even your roosters but sadly, noâ¦itâs still about the chicken we eat. Still, wouldnât one of these be fun to have around?
I like beef and really love a great steak once in awhile even, but nothing is as versatile as chicken so a whole month devoted to chicken works for me; I love it the most! Casseroles, soups, salads, oven-baked, grilled and for me lately, dishes done in the pressure cookerâ¦itâs evidence of just how versatile this meat is.
So Iâve teamed up with some friends to offer you an assortment of our best chicken dishes; whether you actually celebrate National Chicken Month or not (strutting around the yard in a chicken dance perhaps?); there is bound to be something in this mix that you love.
My contribution to our group effort this month is the recipe for Limoncello and Herb Barbecue Chicken Thighs. A local pizza joint serves a Limoncello Chicken Wing Appetizer that I loved and I decided I needed to re-create it at home and while Iâm at it up itâs game and make it a meal. Slightly sweet and tangy with Limoncello, this barbecue chicken dish is perfect with herbs from the garden. Marinate the night before and cook them on the grill for a dinner that is so easy with results that are delicious.
