Hot summer months beg for easy and delicious treats for your family that don’t require a hot oven. No-bake cookies are a perfect solution. To make no-bake cookies an even easier snack, use parchment paper—it prevents a sticky mess in your pan and gives you a great decorating surface at the same time.

Ingredients:

3 cups flakey cereal (with dried berries, preferably)
1/4 cup dried blueberries
1/4 cup sliced almonds
3/4 cup light corn syrup
3 tablespoons butter
3/4 cup almond butter
1/4 cup sugar
1/2 teaspoon almond extract
1/2 cup white chocolate chips

Drizzle:
2 ounces vanilla almond bark
1/2 teaspoon canola oil

Directions:

  1. LINE an 8x8 pan with Reynolds® Parchment Paper. Cut and overlap the corner flaps to fit the parchment snugly into the pan.
  2. POUR the cereal in a plastic bag and seal. Use a rolling pin to crush cereal into a fine, crumbly texture. Add cereal to a bowl and combine with dried blueberries and sliced almonds.
  3. HEAT corn syrup over medium low in a large saucepan until it begins to thin. Add the butter and almond butter. Simmer gently until melted and stir to combine. Add the sugar and almond extract and heat until just combined and sugar is dissolved. Remove from heat. Stir until all ingredients are combined. Add the white chocolate chips and mix in quickly.
  4. PRESS the cereal mix into the parchment lined baking pan with a spatula or your fingers. Let sit for one hour at room temperature.
  5. REMOVE cookies from the pan by pulling on parchment. Leave cookies on the parchment.
  6. MELT vanilla almond bark and canola oil in a microwave or on the stove top for 1 to 2 minutes. Dip the tines of a fork to drizzle the cookies liberally with the melted vanilla almond bark. Let sit for 10 minutes.
  7. CUT the cookies into 1" x 2" squares.

Reynolds Kitchens Tip: Store the cookies between layers of parchment, making it easy for hungry fingers to get their sticky goodies. Just toss out the messy parchment paper when you’re done, making kitchen clean up super easy.
