Paleo Key Lime Pie Smoothie

I’ve been on a smoothie kick lately. There’s something about a rich, creamy, frozen coconut drink that is so indulgent. This paleo key lime pie smoothie is gluten-free, dairy-free, egg-free, and sweetened with just a touch of honey. It is satisfying for breakfast or a snack. It’s decadent enough for a dessert. And it’s a lot faster than baking a pie.

The ingredients are simple — just coconut milk, lime, avocado and honey. I used regular limes for this smoothie because I couldn’t find key limes. If you are lucky enough to have key limes, you’ll need to juice a couple more of them because they’re so small. Either way, this key lime pie smoothie is like dessert in a glass.


Paleo Key Lime Pie Smoothie

Yield: 2 servings

Ingredients

  • 1 cup coconut milk
  • 1 cup ice
  • 1/2 avocado
  • zest and juice of 2 limes
  • honey, or sweetener of choice, to taste

Instructions

  1. Add all ingredients to blender and blend until smooth.
