I can’t seem to get enough of the peaches this year. They’re almost as refreshing as a glass of water on a hot summer day. And they smell simply heavenly. I’ve been tossing them into just about everything like this sweet and addictive bundt cake….and still….can’t…get…enough. I think…and it’s just me….part of the draw and the reason I eat so many peaches in the summer is because before you know it….they’ll be gone. And we’ll all be left with those mealy wannabes at the grocery store come fall. Sitting there…all sad next to the apples and pears.

So, now…I’m trying my best to create my own little peach fest right here in my kitchen. And when Harry & David peaches come knocking at your door….you make a pie to share with your friends. It’s really simple to make, don’t let the lattice crust fool you. Just roll out your dough and cut into 1 inch strips. Lay then across your pie and weave. It’s super easy and creates the perfect flaky topping for your sweet, tender peaches nestled inside. A scoop of vanilla ice cream on top doesn’t hurt, either.
