Peppermint Bark WafflesI don’t know what it is about the month of December and the holiday season that makes me like…no love…peppermint. But there’s something about peppermint mochas, cookies, doughnuts, martinis {you name it} that are just so festive. So in the joy of the season, I’m making Peppermint Bark Waffles. These have holiday brunch written all over them, but…they also work for a ‘breakfast for dinner’ kind of a night and pull double duty as dinner and dessert wrapped in one, right?

Peppermint Bark Waffles
Prep time 5 mins
Cook time 5 mins
Total time 10 mins

Serves: 6

Ingredients
  • 1½ cup gluten-free waffle mix
  • 3 tbs coconut oil
  • 1 egg
  • 1 cup almond milk
  • ¼ tsp pure peppermint extract
  • handful of dark chocolate chips
  • Peppermint Bark and whipping cream to top, optional
  • red food coloring, optional
Instructions
  1. Mix the waffle mix, milk, water and coconut oil until blended.
  2. Add a couple of drops of food coloring, but don't mix in for a more 'candy cane' look. Just use a knife to slice the coloring through the batter
  3. Spoon onto waffle iron and drop in chocolate chips.
  4. Cook as instructed.
  5. Top with whipping cream and crushed peppermint bark, optional.
