They are my favorite fall color and love the taste! I’ve shared several other recipes with pomegranates and have another fabulous cocktail coming your way soon. Today, it’s Pomegranate Guacamole.

Last summer, I went to a party with Rick Bayless, the king of Mexican street food. He gave a presentation on guacamole and ways to change it up. So, here is my fall rendition of the one food I might not be able to live without…guacamole. The combination of sweet and heat and smooth and crunchy textures will make make you want to eat the whole batch yourself….not that I did that… 😉 The contrast of the rich colors make Pomegranate Guacamole a visual feast as well.

Lime Guacamole with Pomegranate Seeds
Ingredients
  • Seeds (or arils) of 1 Pomegranate about 1 cup (You can typically find them ready to use at Trader Joe's and Whole Foods)
  • 6 avocados
  • 3 limes
  • 1 shallot, finely chopped
  • ¼ c chopped cilantro
  • 1 or 2 jalapeños - depending on your desired heat, seeded and chopped
  • Kosher salt
  • Freshly ground pepper
Instructions
  1. Seed the avocado and dice in the peel.
  2. Remove with a spoon and place in a large mixing bowl.
  3. Squeeze the limes into the bowl.
  4. Mash with a fork until it reaches the consistency you prefer. (I like it slightly chunky.)
  5. Add shallots, cilantro, half of the pomegranate seeds and jalapeño.
  6. Mix well.
  7. Season to taste with salt and pepper.
  8. Top with pomegranate seeds.
  9. Enjoy!
