REFRESHING.
If I could use one word to describe this quinoa tabbouleh salad that would be it. Itâs the most glorious summer salad ever.
Unlike traditional tabbouleh which uses bulgur or couscous, I swapped out the glutenous grains for quinoa. And itâs perfect. Not only does the quinoa add a bit more protein to the salad, but since quinoa is so fluffy, it makes the whole salad feel light and airy.
But donât let that fool you: itâs still filling, packed with nutrients and every bit as delicious.
Okay, so hereâs the deal with this salad: it only uses 7 ingredients and can be made in less than 10 minutes if you have the quinoa already cooked. It combines fluffy white quinoa with juicy tomatoes and crunchy cucumbers, which are then mixed with a bunch of parsley and a touch of fresh mint. Then the whole thing gets drizzled with a simple lemon vinaigrette.
Easy. Peasy. And oh so tasty.
