I believe in honest parenting.  I've never been one to shy away from uncomfortable topics.  When my son, who at age 5 asked me where babies came from I was quick to say the hospital.  When he corrected me and told me he meant which body part they came out of, I told him the truth (no special names for body parts here).  When my daughter asked me about Heaven, I told her all I knew.  When my son asked what a vasectomy was, I fessed up (I have to watch that kid).  I think it's important to have open dialogues with my kids in the hopes that they will always be open with me.

Where I stray from my "all cards on the table" parenting is my treats.  I don't have to share everything with them.   Besides, I'm quite certain my kids wouldn't care one lick for my 5 lb container of caramels covered in dark chocolate and sea salt.  I’m positive they would turn their noses up at my stash of Browned Butter Cookies hidden behind my baking bin.  I am convinced they would be repulsed by my creamy chocolate ice cream that I have tucked in the back of the freezer.  And this pudding?  Well there is no doubt in my mind my kids would cry at the site of these little chocolate pudding cups hidden in the fridge.  All the decadence would be too much for them.

After all, this raspberry mocha chocolate pudding is way too sophisticated for their fledgling tastes.  Their tastes buds wouldn't be able to discern the tangy raspberry jam from the bold flavor of the International Delight Mocha Iced Coffee.  There is no way they would be able to fully appreciate the way the thick chocolate pudding rests upon the tongue or how the fresh raspberries and light whipped cream swirl together in harmonious bliss.   The only thing for me to do is to keep these little guys in the fridge and whenever I need a pick me up, or need to take back 10 minutes, I can grab a spoon, my chocolate pudding and recharge myself.

The way I see it, hiding this gorgeous pudding is totally doing them a favor.  It's quite self sacrificing of me; one day they'll probably thank me.

Most of this post is dripping with sarcasm.  Truth is, I may be a teeny bit selfish and unable to share.

Raspberry Mocha Chocolate Pudding

Quick, easy chocolate pudding from scratch! A little mocha and raspberry turn this ordinary dessert into something extraordinary!

Serves: 4
Ingredients
  • ½ cup sugar
  • ¼ cup cocoa powder
  • 2 tablespoons cornstarch
  • ¼ teaspoons salt
  • 2 cups International Delight Mocha Iced Coffee Beverage
  • 1 teaspoon vanilla
  • 1 tablespoon butter
  • ¼ cup raspberry preserves
  • 1 cup heavy cream
  • 3 tablespoons sugar
  • raspberries for garnish
Instructions
  1. In a heavy saucepan, combine sugar, cocoa, cornstarch and salt. Gradually whisk in iced coffe. Bring to a boil over medium heat; boil and stir for 2 minutes.
  2. Meahwhile, place ¼ cup raspberry preserves in a microwave safe bowl. Heat in the microwave for 30 seconds or just until melted.
  3. Remove pudding from the heat; stir in butter, preserves and vanilla. Spoon into individual serving dishes. Chill.
  4. Before serving: whip heavy cream in the bowl of a stand mixer. Whisk cream on high for 2-3 minutes or until thick. Add sugar one tablespoon at time. Continue to beat cream just until stiff peaks form.
  5. Top pudding with cream and garnish with raspberries.
