Ahh, dessert: My favorite meal of the day.

Since adapting a âraw âtil fourâ diet, Iâve been looking for ways to indulge in sweets without ingesting dairy, refined sugar, or other chemicals I canât pronounce. That being said, Iâver discovered that there is a whole world full of deliciousness that I had yet to tap into: raw & wonderful desserts.

Iâd like to introduce you to my first rendition of peanut butter pie. This is so easy to make, and it tastes like cheesecake, yet contains no dairy or refined sugar. It is simple, delightful, and believe it or not, healthy. This is part of the raw and vegan diet (meaning nothing is cooked about 104 degrees). It is 100% vegan, no baking involved, and you keep it in the freezer for later-kind of treat. Here it goesâ¦
2/3 cup walnuts
1/2 cup of dates (soak first for easier blending)
1 tbsp raw almonds
1/4 cup shredded coconut
1 pinch of Himalayan sea salt
1.5 cups cashews soaked for at least 4 hours or overnight, then drained
4 tbsp coconut oil, melted
2 tbsp raw simple syrup
1.5 medium ripe bananas (the browner, the better)
1/4 tsp seal salt
2-3 tbsp lemon juice
4 scoops of raw peanut butter (crunchy!)
 Crust: In a food processor (or Vitamix), blend the walnuts to make a meal, then add dates and coconut shreds. If it is too wet, add more walnuts/coconut. If itâs too dry, add more dates.
Using a circular pan, or plastic container, line with plastic wrap and press the âcrustâ down with a spatula. Cover and freeze for 2 hours.

Filling:Â Rinse and drain the cashews and blend all ingredients together. Feel free to adjust the flavor to your desired tasting. Salt and sweeten accordingly.
Pour ofer the âpie crustâ that was frozen earlier, then put back in the freezer for at least 2 hours before indulging.

Thaw for 10 minutes in the refrigerator before topping it off with crushed peanuts, coconut cream, bananas, maple syrup, or anything else your little heart and empty stomach desires. Go crazy, and bon appétit!
