dessert meets breakfast with these red velvet muffins, just perfect for Valentine’s Day
It seems that you either love red velvet, or you don’t. I am firmly in the LOVE category. I didn’t think the kids were with me, so I never make red velvet cake. Last time I made a cake, I was forced to eat the entire thing by myself.
Last week when I made red velvet mug cookies the kids couldn’t  get enough. They spent the better part of the weekend microwaving mugs one after the next. Turns out that with red velvet cake, it’s the frosting they don’t like.Â
Crazy right. I LOVE cream cheese frosting. I could eat cream cheese frosting all by itself.
But that means I can make red velvet as long as there isn’t any frosting involved, and with Valentine’s Day right around the corner, I plan on getting my fill of red velvet, starting with these muffins.
