Monday was a holed-up day in front of the TV, catching up on shows I missed since Thursday evening, after weekend of July 4th, cooking and grilling for out of town guests. Thankfully, I was not one of the shoppers earlier in the day rushing to the grocery the following day. There were two severe storm alerts within a 30-minute interrupting a national news and phone alert from the county government that Tuesday night, July 8. I learned my lesson well to stock up the pantry with emergency food since the Bird Flu warning of yesteryears, (CDC said one had to be quarantined, stay at home for 30 days until the epidemic passes through an area).
My emergency food list has been trimmed down to a weekâs supply since then, but in the wake of what happened in certain areas in Maryland last winter, no power for almost 10 days, Iâm inclined to increase my pantry supply. What is currently happening during these summer storms happened last winter storms, trees falling down on power lines or unfortunate homeowners with trees hitting their roofs or cars. The list below is a guide for oneâs own food preference on what to stock up. One will notice my immoderate penchant for noodles and pasta, what would my life be if gluten intolerance is in my system?
Or maybe, the girl scout in me has gotten used to this stocking up operation due to Manilaâs frequent typhoon events. In Manila with Tuesday night kind of weather with no power, it will be hot steamed rice (wood stove still in use) mixed with raw egg, patis (fish sauce) and coconut oil. It was safe to eat raw eggs then, my lola (grandmother) had more than half a dozen layers roaming in our backyard poultry and gave us their much desired golden yolks. They ate corn kernels and palay (unhusked rice, see here), no injectables or water soluble drugs. In relation to safe eggs, the afternoon of July 8 before the storm, Dr. Oz show had a segment in his show called Dirty Chicken (see here) which I saw last Saturday, after the 3-day power outage. Unfortunately, real free-range, non-GMO chicken cost more than the best brand of holiday ham or organic food.
Ingredients:
Note: Tbsp/tablespoon
4 roma tomatoes, chopped & seeded, to avoid a watery filling, OR
1 cup canned diced tomatoes, drain well
1/2 cup distilled vinegar, for rinsing the tomatoes (here)
1-1/2 water
1/2 cup thinly sliced quartered red onion
2 salted duck eggs, coarsely mashed (available @ all Asian grocery stores)
3 Tbsp cream cheese with chives
4 Kaiser buns or potato buns
