One time I made this delish shrimp recipe that I planned a whole month in advance for Mardi Gras so I could post it on here just in time for the cray-cray celebration I was on a roll, but this and that happened and the post was no more. However, now...I can post it and you can enjoy it. Yum!

Shrimp Creole Over Rice

Ingredients


  • 1/2 pound small shrimp shelled and de-veined
  • 1/4 cup olive oil
  • 1/2 medium onion (finely chopped)
  • ~ 4 stalks of celery (finely chopped) 
  • 1 medium carrot (peeled and chopped)
  • 2 cloves garlic, minced
  • 1 15 oz can tomato sauce
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon cumin
  • Salt & pepper to taste 
Directions

In a large skillet heat the olive oil over medium high heat. Add the onions, celery, carrots and garlic, cook for 3 to 4 minutes or until the onions are translucent.
 
Add the tomato sauce, oregano, and cumin into the pan bring the sauce to a simmer and then reduce the heat to medium low heat. Allow the sauce to simmer for about 15 minutes.

Add the shrimp and cook in the sauce for 3 to 4 minutes or until the shrimp is fully cooked through stirring occasionally and flipping the shrimp about halfway through.

Serve each portion over steamed rice and a generous helping of sauce.
