SLOW COOKER SWEET POTATO CASSEROLE made with Bourbon and Brown Sugar. Sweet, creamy brown sugar sweet potatoes with a hint of bourbon and topped with a velvety brown sugar sauce and crunchy pecans! This side dish is made even EASIER by using the slow cooker! The perfect dish for Fall and all Holidays!
Iâm thinking about Thanksgiving. Is it too early?? I love planning out my Thanksgiving assault. Turkey Iâm not typically too excited about, but the side dishes?! The more the merrier! And letâs just say this Slow Cooker Sweet Potato Casserole with Bourbon and Brown Sugar has earned a spot on the table this year!!
Making this dish in the slow cooker means itâs super easy, and best of all it can free up some space in the oven if needed. But if you already have the slow cooker taken you can definitely make this in the oven too. Iâll include the directions for that in the recipe below too. Really, we canât lose with this dish!
I do start with fresh sweet potatoes, peel them and chop them up. We can cook them in the slow cooker to soften, cook them on the stove, or if all else fails and we need a casserole quick! we can use a canned version. My favorite is the slow cooker, because I can toss them in with a little water and let it do its thing.
Once the sweet potatoes are cooked and softened. We add in the other ingredients. Milk and butter make the casserole creamy and rich. Feel free to use half and half or cream if you want to amp it up a bit. I use whole milk. And the eggs add an almost pie-like custard texture to the sweet potatoes. Pie as a side dish?! Yes!!
Some brown sugar, you can use a dark brown for a more intense molasses experience or light brown which is what I use. A bit of cinnamon and nutmeg. Feel free to add some cloves, and even a pinch of ground ginger if you want. I love to let the sweet potato shine though. Too many spices can take away.
But where things get fun⦠weâre going to add some bourbon to these potatoes. Cooking with bourbon is one of my favorite things, which explains these Bacon Bourbon Meatballs. And adding it to sweets is another pastime I have, which leads to this Brown Sugar Bourbon Cookie Butter and Chocolate Bourbon Truffles. Iâve seen Maple Bourbons which I think would be lovely, or you can do a regular bourbon. Iâve used a Honey Bourbon, or actually I think itâs considered a liquor. But the flavor it gave was perfect!
Mash it all up. Smooth it out and then we can do our topping!
The topping is kind of why I love sweet potato casserole so much. The typical toppings for sweet potatoes are marshmallow OR pecans. Iâm more of a pecan type girl myself. Especially when those pecans are drenched in a butter, brown sugar sauce and baked on top of creamy sweet potatoes.
Pour the sauce over the top of the sweet potatoes and we will let the whole thing cook in the slow cooker, or bake in the oven, for about another 30 minutes.
Then weâre left with the ULTIMATE sweet potato casserole. This casserole is smooth and creamy with the crunch of the pecans on top. Spiced with just a hint of cinnamon. This casserole will be the first dish finished come Thanksgiving, or whatever meal you decide to make this to go with! Guaranteed! My family was waiting off to the sides with bowls and forks in hand while I snapped the pictures. Letâs just say this sweet potato casserole did not last long.
