If youâve never had âsun tea,â itâs just tea thatâs been brewed by the sun. Itâs a great way to make big batches of tea during the summer without turning on the store or using the microwave. My mom used to make huge batches of sun tea almost every day during the summertime when I was growing up. This Mint Green Sun Tea is a very refreshing and easy way to upgrade regular green tea.
If you have mint growing in your garden you know that it grows like a weed. Itâs a great way to use up the mint without letting it go to waste. Just donât leave the mint in there too long (beyond what the recipe calls for). The mint flavor begins to turn after a certain point.

4 sprigs Fresh Mint, plus a few for garnish
4 Green Tea Bags
juice of 1/2 Lemon
1/2 Lemon, sliced for garnish
Fill 1 pitcher full of water. The pitcher should hold about 2 quarts.
Drop the mint and tea bag into the pitcher of water. If the mint is not fragrent, then you may need to muddle the mint leaves.
Cover with a towel and secure with a rubber band, if it doesnât have a top.
Place the pitcher outside in the sun. The heat of the sun is what brews the tea.
Let the pitcher sit in the sun for about 8 hours.
One you have finished brewing the tea, remove the tea bags and mint.
Add the lemon juice then stir.
To serve pour over ice with a slice of lemon and sprig of mint.
