Itâs Sunday, which means that most of you are preparing for a healthy week ahead. Youâre steaming veggies, soaking beans, making batches of baked chicken, brown rice and packing salad ingredients into mason jars.Â
I love Sundays. Every Sunday is a mini revival. Monday starts a new week, new beginnings, new opportunities and a new focus. Each week, I try to focus on something different. Perhaps that means try a new exercise series, eat something different or try to be more organized. I like to set goals, make to-do lists and think about what Iâd like to accomplish this week.
This week, Iâm focusing on three things:
1. Prioritize better.
2. Exercise in the mornings.
3. Drink more water.
What are you focusing on? Trust me, writing down your goals for the week and putting them somewhere visible makes them much more attainable. Give it a try!Â
If youâre the same way, youâre looking for recipes that you can make ahead on Sunday for the week. Today, I have the perfect recipe for you! Itâs easy to make and doesnât take much time to clean up (itâs a one pot wonder!).
Try it for dinner tonight and double the amount of rice but keep the shrimp the same. Set aside the extra rice in the refrigerator and then, using those leftovers, swap in your protein of choice throughout the week. Perhaps itâs that baked chicken you prepared or simply, a handful of beans!Â
This butternut squash âriceâ packs a spicy and flavorful kick with the smoked paprika and chili powder. It pairs wonderfully with mostly everything, so itâs a great base for other meals. Get creative and toss in some olives, some avocado or some spinach!Â
