The other night I wasnât really hungry enough for dinner but needed something. I remembered buying some beautiful figs so thought I would make a snack. I stuffed them with goat cheese and cubes of prosciutto and it made the perfect bites of salty and sweet. These would be great on a salad or served as party appetizers.
Ingredients:
6 fresh whole figs
3 1/2 oz chopped prosciutto
2 oz goat cheese
1 T chopped flat leaf parsley
Preheat the oven to 350°.
Heat a frying pan over medium-high heat. Cook the prosciutto until slightly crispy. Remove from heat and set aside.
Wash the figs and cut off the tops. Using your thumb, press into the center, creating a little well in the fig.
Mix together the goat cheese, prosciutto and parsly in a bowl. Fill the figs with the goat cheese mixture. Bake about 10 minutes.
