This recipe is part of the most recent recipe swap hosted by A Taste of Home Cooking-and the theme this time was perfect for this time of year-Grilling! It has been hotter than hot this year with one heatwave after another and when it's that hot outside, I refuse to cook indoors.  Grilling is a great way to get out of cooking inside, and this recipe from I Was Born to Cook is perfect for a hot summer night-not only because it's delicious but also because it takes almost no time at all to prepare.

This was definitely a fun recipe!  The tequila puts a fun twist on this meal and I loved the tropical flavors of the mango and cilantro. Marinating the shrimp makes it really flavorful.  I served this with some fried plantains and Matt and I felt like we were having dinner in the Caribbean!

Tequila Marinated Shrimp Skewers

2 pounds large shrimp, peeled and deveined
1 cup tequila
Juice from 3 limes
3/4 cup chopped fresh cilantro
2 teaspoons cayenne pepper
Kosher salt
Skewers (if wooden, soak for at least 1 hour prior to using)
Pineapple, mango, grape tomatoes, red onion (or whatever else you'd like-I used mango, yellow squash and red onion)

Place shrimp in a bowl. Stir in tequila, lime juice, cilantro, cayenne and salt to taste. Let marinate for at least one hour.

Place shrimp and other ingredients (mango, etc) onto skewers. Grill for a few minutes on each side, until shrimp is cooked through.
