I donât know how or when Easter brunch became a thing, but it seems appropriate that a holiday which celebrates resurrection and new life would begin with a morning feast. Brunch is such a lovely meal. Wedged in that golden hour between morning and afternoon, brunch is the meal where anything goes. You can eat pancakes or a burger, eggs or french toast. One of my favorite local restaurants even serves a french toast platter with scoops of cinnamon ice cream on top for Sunday brunch. So yes, you can even eat ice cream for brunch. Youâre welcome.
