Thyme to Delight

The Thyme to Delight cocktail was derived through a new tea supplier who gave me a sample of an amazing hibiscus tea. With its intricate flavour profile I wanted to create a fruity drink which uses a traditional Clover Club breakdown with a few enhancements to bring it to life. Strawberries infuse this rich, floral American style gin which is then balanced with citrus and the hero of the cocktail, the Thyme & Hibiscus syrup. - Kurtis B

Ingredients

  • 45mL Strawberry-infused Aviation Gin
  • 30mL Fresh Lemon Juice
  • 15mL House-made Thyme & Hibiscus Syrup
  • Egg White

Instructions

  1. Add all the ingredients to your cocktail shaker
  2. Shake & double strain into a chilled cocktail/coupe glass
