Aloha hoapili! Who doesn’t love a delicious tiki drink? I recently took a recipe from one of my favorite cocktail books, Beachbum Berry Remixed (which is actually a combination of two books + some bonus recipes) and made it for myself and some visiting family. Yes, it’s the middle of winter, but isn’t the whole point of tiki that you can take a holiday anytime, as long as you have rum?

The Ingredients:

  • 3/4 oz Fresh Lime Juice
  • 1 oz Fresh Pineapple Juice (Cheating, using canned. It’s the good stuff – Dole. Sue me.)
  • 1/2 oz Rotman & Winter apricot brandy
  • 1/2 oz Orgeat Syrup
  • 1 oz Light Rum
  • 1 oz Gold Rum (Cheating here too – using Rhum Agricole. OK this is pretty off-recipe, but I didn’t have gold rum and this stuff is tasty.)

Shake and strain into a glass with fresh ice. Garnish with a cocktail cherry and orange slice speared to a paper parasol (done and done).

Beachbum Cocktail

They’re very pretty. I wish they filled a whole Collins glass. Will have to use tiki mugs next time.

Ingredients for Beachbum Cocktail

Even the most finicky of drinkers can’t turn this one down. This is a great tiki drink for those who “don’t like the taste” of alcohol (lol people are wild, huh). I especially like the bubble-gum-like flavor that happens when you bring pineapple juice and apricot brandy together. It’s a wonderful balance of sweet and tart, rich rum and almond flavor, and bright fruitiness. Everything I want in a tiki drink. Will have to make this one according to the original recipe soon.
