Touchy stuff, politics and pancakes. Both are hot button topics. Two grown adults throwing down over what breakfast joint has the best pancakes? Typical Saturday morning. Heck, syrup just might be the glue that is currently holding this country together. Donât quote me on that since I havenât had real sugar or an intellectual conversation about the presidency since 2008.
Wake up, America!
Lately people have been getting legitimately weird about politics. It is nearly impossible to have a civilized conversation with someone without one person losing their mind. My group text dudes, aptly named Group Chat¹, have been hashing out this whole election thing for a while now and at one point every other text simply said âWake up, America!â, in a completely adult, not-childish-at-all manner. Thatâs when it clicked.
Now he was referring to some sort of important politic-y thing, but I was already on to something more than sort of important. Pancake optionsâ¦as in there arenât enough of them. Who says we have to âgo gluten or go hungryâ? Not in this America! We donât need refined grains to have kickinâ pancakes. We need pancakes that are of all shapes, sizes, and levels of carbohydrate!

*Crowd roars and collectively unbuttons jeans*

Combine flour, eggs, milk, and oil in a large bowl and mix until well, leaving out the baking powder until you are ready to cook. Set aside for 10 minutes to thicken. This is a great time to have a brunch cocktail! Or I guess you could prepare the syrup...
In a saucepan, combine sweetener, water, and berries and bring to a slow boil. Reduce heat to a simmer and cook uncovered from about 20 minutes or until the sauce reaches your desired thickness. I like it thick. Is it syrup? Jam? No one knows.
Add the baking powder to your batter and mix well. Grease a skillet and pour batter slowly onto pan, medium heat. The pancake spreads quickly so if you have a lid handy, place it over the skillet and let the pancake cook 3/4 of the way before flipping. This will give you more lift and a fluffier pancake. Top with butter and hot syrup.
¹ Group Chat is an amazing meeting of the minds that includes myself and three dudes whom Iâve known for quite sometime in different capacities. Weâve chatted everyday for 3 years. Itâs probably not a record but itâs pretty damn amazing anyway.
