My God I love this dish!
On my personal scale of awesome food from 1 to 10, this one scores a 15. Seriously.
If it wasn't for the side effects some people would experience after eating beans (ahem) I'd probably be having it several times a week!
But then again I might have said that about many other dishes on this challenge too, so I'm asking you not to hold me accountable for what my sleep deprived brain is dictating to my fingers right now, I'll give you a vegan cookie...
Nevertheless, I am keeping my grounds, and shouting from the top of my lungs: I LOVE YOU BEANS IN LEMON AND GARLIC SAUCE!

You should be thankful you're not seeing the dark circles under my eyes.

Yes you've guessed right, busy week is still going strong and kicking on my side of the computer and I can't wait for the weekend to arrive.
Lucky for me, these creamy-lemony-garlicy beans, classify as top rated comfort food which my soul is craving. Thank goodness for dishes like that!
Any person who has tried it is hooked, and it can't be any simpler or faster than that. How fast you ask? It's the Hussein Bolt of your speedy weeknight dinners, that's how fast.

White Beans in Lemon Garlic sauce - Fasolya Mtabbaleh - Vegan Challenge Day 10
Serves 2:
- 2 Cans white beans or 3 cups cooked white beans
- 3 cloves of garlic, crushed
- 2 tablespoons dried mint
- 1/2 cup lemon juice
- 1/2 cup water
- 2 tablespoons olive oil
- Salt
- Flat bread to serve

Combine all the ingredients together in a pot, and heat.
Mash about 30-40% of the beans with a heavy object while still in the pot (like a pestle, bottom of a glass bottle, back of a ladle etc..) and stir. This will emulsify the sauce and turn it white, rich and creamy.
Serve warm with flat bread and a side of Salad.
