This past summer my son became OBSESSED with chicken wings. He asked me to order them everyday. At first I thought it was cute and we made a game out it. We ordered them from every local establishment ( 1-2 orders per week) and tried them all. We judged them based on color, crispness, amount of sauce, spicy level and overall finger-licking goodness. We constructed a rubric ( a little academic lesson thrown in during the summer) that helped us in rating each establishment we visited. After a few weeks, my son's obsession did not subside and his obsession was becoming putting a dent in the weekly food budget. So I did what every sane mother would do - I learned how to make the best darn wings in town...at home, from scratch. But in order to make this work long term, my wing recipe had to be healthier and tastier than the other 8 varieties we tried.

The verdict - A 5 on the rubric scale, SUCCESS! After several test recipes and lots of messy napkins, I have come up with what my family believes to be the best wings in town. They are bake ( not fried) and finger-licking good.

This Sunday is not just any Sunday, it's Super Bowl Sunday. The perfect opportunity to make these wings. I guarantee that you will have the winning score the end of the night, and you will be the Champion.

Oven Baked Buffalo Wings - Makes 6 to 8 servings

Ingredients

  • 3 pounds chicken wings
  • 6 tablespoons butter
  • 1/2 cup hot sauce
  • 1 teaspoon salt
  • Blue Cheese or Ranch dressing, for dipping
  • Celery and carrot sticks, to serve

Instructions

  1. Let the wings come to room temperature on the counter while you prepare the sauce.
  2. Melt the butter in a small saucepan over medium-low heat. Once melted, remove from heat and whisk in the hot sauce and salt.
  3. Transfer the wings to a mixing bowl. Pour half the buffalo sauce over them and toss to coat.
  4. Cover the bowl and marinate on the counter for 20-30 minutes, or in the refrigerator for up to 24 hours. Reserve the remaining buffalo sauce.
  5. Heat the broiler: Position the oven rack 6 to 8 inches below the broiling element. Line a baking sheet with aluminum foil.
  6. Remove the wings from the marinade and shake off any excess. Arrange the wings on the foil-lined baking sheet, spaced a little apart. Discard the marinade.
  7. Broil for 10-12 minutes, then flip and broil for another 10-12 minutes. The wings are done when the skin is crispy and the meat pulls easily from the bones.
  8. Pour the remaining hot sauce over the wings and toss to coat.
  9. Serve immediately and Enjoy!
